Oyogu hone – swimming bones
I have seen and taken part in meals featuring various types of iki zukuri: raw fish prepared so the creature’s mouth and gills are still working and the tail still quivering on the serving plate, small fish served in a bowl of water from which they are snatched with chopsticks and swallowed alive, shrimp whose hearts you can see beating through their thin shells. I even put a shrimp into my mouth once (not knowing it was iki zukuri) only to have the thing start jumping around.
But despite all of this, I have never seen the oyogu hone (swimming bones) technique shown in the video clip below.
In the clip, which appears to be from Japanese TV, a young man goes into a shop and asks the man behind the counter if they can do oyogu hone. The young man enjoys some sashimi, and the oyogu hone appears at the end of the clip.
WARNING: The contents of this clip are not for the squeamish.
That was… enlightening. Can’t imagine what’s going on inside the tiny little mind of the other fish in the tank.
February 24th, 2007 at 5:31 amReminds me in a tangential way of a very cool South Korean film called “Oldboy”.
Actually Ikizukuri is my favorite sashimi dish. I eat it every couple of weeks.
Agi is the best fish to eat in this style in my opinion. I know it looks cruel and gross but really the fish is very dead. It’s just the muscles that twitch. Something that even humans do (Not that I would eat one of those!!!)
Anyways, trust me on this… Ikizukuri is delicious!
February 24th, 2007 at 6:43 amI don’t mind ikizukiri, but this is a little grim for me. BTW RYO, you might be thinking of “Seom” / “The Isle” rather than Oldboy, although that octopus scene in Oldboy is reminiscent as well!

February 24th, 2007 at 9:19 amCan we please get Drew Barrymore, Sean Penn, Alec Baldwin and…Richard Gere to come in and stop this cruelty to animals?
That fish is missing half of it’s friggin body. Where’s PETA when you need ‘em?
February 24th, 2007 at 10:07 amBut trust me, the fish died for a good cause!
February 24th, 2007 at 10:37 amHoly god I have to try ikizukuri sometime. That’s more Man Points than I could even count.
February 25th, 2007 at 10:51 amThe japanese aren’t just crazy they’re cruel.
March 2nd, 2007 at 2:24 amPeople eat fish as food. It was going to die and it did. It died to feed someone. Peta can stop fucking with people who chose to eat meat now. Vin, why do you need a bunch of bad celebs to do something you wont do yourself. As an omnivore I eat meat and have no intention of stopping. Plants share the same biological death upon ingestion. You are a hypocrite monster. You line plants up in rows to harvest them. PLANTS ARE ALIVE TOO.
